For the last year, I have been working on improving our protein and vegetable intake at breakfast for a healthier lifestyle. This led me to creating a scrumptious recipe - Breakfast Quinoa with Ground Beef and Eggs. The first time I made it, I had to leave for an unexpected family emergency for four days and upon returning, the dish had gone bad, and I had to discard it. I was disappointed because I was really looking forward to enjoying it. The dish is full of flavor, comforting and guilt-free. The quinoa, being the natural grain in this dish, binds and incorporates other flavors together. The beef is rich and meaty, while the scrambled eggs are soft and fluffy. The beans add protein and creaminess, and the onions are savory with a bite. The sharp cheddar cheese has a nutty flavor with a nice tang, and the pepper jack cheese adds a little roasted pepper flavor. The cilantro adds a citrusy bite that ties the flavors together perfectly.

Mix while the eggs, beef and quinoa are still warm. The heat will help infuse the flavors of the other ingredients.

Ingredients
½ cup cooked quinoa
1 cup water
8 scrambled eggs
1 pound ground beef – browned
¼ cup purple onions diced
2 cup spinach chiffonade
15.25 ounces can of black beans rinsed and drained
2 ounces pepper jack cheese shredded
2 ounces sharp cheddar cheese shredded
1 ½ cup cilantro
1 teaspoon kosher salt
1 teaspoon black pepper
Directions
In a pot, cook quinoa per quinoa directions using ½ cup quinoa and 1 cup water.
In a saucepan scramble 8 eggs. Dump into mixing bowl.
In the same saucepan, brown the ground beef, seasoning with ¾ teaspoon kosher salt and black pepper.
While the beef is browning, add everything else into a mixing bowl; purple onions, spinach, black beans, pepper jack, sharp cheddar, cilantro, and ¼ teaspoon kosher salt and black pepper. Once beef is browned, toss in bowl and mix, along with the quinoa.
Serve
Notes
If there are leftovers, when reheated, I love to add extra shredded sharp cheddar cheese on top. It is delicious and comforting.
