I adore having fresh raw vegetables for lunch as it feels like a lighter meal option for midday. The Cilantro Mint Pea Salad has now become my favorite lunch choice for me. I prepare it over the weekend, and both my husband and I relish it throughout the week. This salad is both refreshing and satisfying. The sweet peas, zesty cilantro, fragrant mint, savory feta, and the harmonizing flavors of lime juice and garlic make it a delightful dish. Whether for a simple weekday meal or a party contribution, this dish is easy, tasty, and budget-friendly.

  • If you are preparing this Cilantro Mint Pea Salad for an event (Easter,) this dish is ideal for making in advance to save time on the day.

Servings

  • Serving Size: 1/2 cup

Ingredients

  • 3 cups peas (I use frozen peas thawed)

  • ½ cup purple onion diced

  • ¼ cup feta

  • 1 tablespoon lime juice

  • 1 tablespoon extra-virgin olive oil

  • ½ cup mint

  • 1 1/14 cups cilantro

  • 1 large garlic clove

  • 1 teaspoon jalapeno


Directions


  1. In a bowl, combine peas, onion and feta. Set it aside.

  2. In a bullet or food processer, add and puree lime juice, oil, mint, cilantro, garlic and jalapeno

  3. Pour sauce over pea mixture, combine thoroughly

  4. Season with ½ teaspoon kosher salt and black pepper. Combine

  5. Serve chilled or room temperature


Notes

  • I really like mint, so I add more occasionally. Adjust the sauce to your preference

  • Thinly sliced radishes are a wonderful garnish
