Fresh roasted pumpkin seeds outweigh store bought ones every day. Cinnamon Sugar Pumpkin Seeds are an extra treat. It is a small batch that you can make along the side of traditional pumpkin seeds. These special pumpkin seeds provide two great crunches. The classic pumpkin seed crunch and the cinnamon and sugar crunch. Satisfying. The flavor is a wonderful combination pumpkin seed roast and cinnamon sugar. Fall recipes .... yummy!!

Equipment

  • Baking sheet


Tips or Tricks

  • Dry pumpkin seeds flat on paper towel to assist drying on the bottom of the seeds as well as the top (note, they will stick a little to the paper towel once dry, but it is easy to pull off)

  • The dryer the pumpkin seeds, the less time they will take to bake


Length of Time

  • Prep Time - 5 ½ hours (includes soak and dry time)

  • Cook time - 50 minutes


Servings

  • Serving Size: 1/4 cup

  • Servings: 2


Ingredients

  • ½ cup fresh pumpkin seeds

  • 2 cup water (for soaking)

  • 1 teaspoon kosher salt (for soaking)

  • 4 tablespoon salted butter melted

  • 1 teaspoon ground cinnamon

  • 2 tablespoon granulated sugar

  • 1/8 teaspoon ground nutmeg


Directions

  1. Cut, clean and separate pumpkin seeds from pumpkin.

  2. Place pumpkin seeds in a bowl, with salt and water. Clean pumpkin seeds by agitating them in water and scraping off the remainder of pumpkin guts.

  3. Let soak for 1 hour.

  4. Rinse, layout flat and dry for 4 hours (these pumpkin seeds will not be completely dry)

  5. Preheat oven to 250° F

  6. In a bowl, combine seeds, butter, cinnamon, sugar, and nutmeg.

  7. Pour onto baking sheet

  8. Bake for 50 minutes.

  9. Let cool completely. Serve.
