A little warmth from the turmeric and a little bite from the ginger. This cookie is soft on the inside, and crunchy on the outside. Sweetened with a little honey. Brightness from the lemon juice and zest.

Anyone who knows me knows I love a good ginger and turmeric combo. Ginger Turmeric Cookie, I am here for you and staying! It is like no other cookie. It is sweet, rich and decadent. The outside of the cookie has a little crunch while the inside is soft. You get a little bite from the ginger, subtle heat from the ginger and turmeric.
Honest review – I had a taste tester eat the cookie. Politely she stated the cookie is good, but not for her. By the end of the night, she had 2 cookies (maybe more 😉 but we won’t tell anyone.) This cookie will surprise you.

Tips or Tricks
Beat the butter for a few minutes, allowing it to get lighter in color. This will add air, creating fluffier cookies.

Ingredients
1 cup salted butter softened
1 ½ cups granulated sugar
1 teaspoon lemon zest
1 tablespoon lemon juice
2 tablespoons honey
3 eggs
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 ½ teaspoons ground ginger
1 ¼ teaspoons ground turmeric
1 1/2 teaspoon cream of tarter
¼ teaspoon black pepper
¾ cup candy ginger chopped
Directions
Preheat oven to 350° F
Line baking sheet with parchment paper
In mixing bowl, cream butter and sugar
Add lemon zest, lemon juice, and honey. Mix.
Add eggs, mix thoroughly.
In separate bowl, mix flour, baking powder, baking soda, ginger, turmeric, cream of tarter and black pepper.
Add to mixer, mix thoroughly
Add ginger candy
Mix.
Scoop onto baking sheet with ice cream scoop.
Bake for 10-12minutes.
Let cool

Notes
If you prefer smaller ginger candy, add it to a food processor, pulsing to your desire size. Just make sure not to get sugar consistency.
