Soft Gochugaru Chocolate Chip Cookies, with a subtle heat from the Korean Pepper Flakes.

There are a hundred chocolate chip cookies out there, each one a little different from the others. This Chocolate Chip Cookie has Gochugaru in it. Korean pepper flakes. These pepper flakes add a subtle heat. It isn't too much; it is the Goldilocks of heat. Just right.

It is enjoyable, your mouth will not burn. It is one of my Swicy dessert collections. Sweet and spicy in one. Wonderful combination.

Equipment

  • Sheet pan

  • Parchment paper

  • Ice cream scoop


Tips or Tricks

  • When adding the semi-sweet chocolate morsels, just mix until combined. This will prevent them breaking into smaller pieces.

  • Prep Time - 10 minutes

  • Cook time - 13 minutes

  • Servings: 12 -18 depending on size of cookie


Ingredients

  • 1 cup butter – unsalted

  • ½ cup granulated sugar

  • 1 cup brown sugar

  • 2 teaspoons vanilla

  • 3 eggs

  • 2 ½ cups flour

  • 1 teaspoon kosher salt

  • ½ teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 tablespoon + 1 teaspoon Gochugaru pepper

  • 12 ounces semi-sweet chocolate

  • 1 cup walnuts - optional


Directions

  1. Preheat oven to 350° F

  2. In mixer bowl, cream together butter and sugar until lighter in color and double increased in volume

  3. Add egg and vanilla

  4. Scrape bowl down

  5. In a separate bowl, combine flour, salt, baking soda and powder and Gochugaru pepper. Whisk.

  6. Pour into butter and sugar mixture. Mix until just combined

  7. Add nuts and chocolate.

  8. Put parchment paper on baking sheet

  9. Scoop onto parchment paper

  10. Bake for 10 – 12 ½ minutes

Notes

  • Time will vary on oven and pan used
