Honey Ginger Lemon Bars

Lemon Bars with luscious honey and zesty ginger. Shortbread bottom, thick lemon custard layer finished with powder sugar.

Growing up and still today, lemon bars are one of my bar desserts. Tangy, citrusy and lemony. These Honey Ginger Lemon Bars are a notch higher. They include my favorite tea flavors, ginger, honey and lemon. This recipe is tangy and citrusy with a luscious honey flavor and a kick of ginger. It is a crowd pleaser!

Let the bars fully cool prior to cutting (they need to set completely)

Prep Time - 5 minutes
Cook time - 15 minutes

Serving Size: 1 square
Servings: 12 to 15 depending on size of bar
Ingredients
Curst
1 cup butter salted softened
¾ cup granulated sugar
½ teaspoon salt
2 cups flour
1 tablespoon corn starch
1 teaspoon ginger powder
Filling
4 eggs
1 cup granulated sugar
½ cup lemon juice
1 tablespoon lemon zest
2 tablespoons honey
¼ cup flour
Directions
Instructions
Preheat oven to 350° F
Grease 9x13 casserole dish or cake pan
Crust
In mixer bowl, cream butter, and sugar until light and airy
In separate bowl, mix with a whisk flour, salt, ginger powder, and corn starch
Pour flour mixture into butter and sugar mixture. Mix until just combined.
Press evenly into bottom of baking dish.
Bake 25 minutes
Pull out
In bowl, mix egg, sugar, lemon juice and zest, honey, and flour.
Pour over baked crust
Bake another 12 minutes
Pull out, let cool before serving
Notes
Crust should be fully baked prior to pouring on lemon filling
Lemon filling will have a slight jiggle.
