Every fall Mom would make her pumpkin bars. It didn’t matter where she took them, they were devoured. It is the perfect fall dessert, Pumpkin Bars with Cream Cheese Frosting. These bars are super moist and filled with pumpkin spice. The decadent cream cheese frosting adds a yummy tang completed the dessert. I have no doubt, they will become a favorite in your family too!

Servings

  • Serving Size: 1 bar

  • Servings: 12 – 15 (depending on size of bars)


Ingredients

  • 4 eggs

  • 1 ½ cups granulated sugar

  • 1 cup vegetable oil

  • 1 – 15-ounce pumpkin puree

  • 2 cups all-purpose flour

  • 2 teaspoons ground cinnamon

  • 1 teaspoon baking soda

  • 2 teaspoons baking powder

  • ½ teaspoon ground cloves

  • ½ teaspoon ground ginger

  • ½ teaspoon ground nutmeg

  • ½ teaspoon salt


Cream Cheese Frosting

  • 8-ounce cream cheese – softened

  • ¼ cup salted butter – softened

  • 4 cups powdered sugar

  • 3 tablespoons heavy cream


Directions

  1. Preheat oven to 350° F

  2. Grease baking pan

  3. In mixing bowl, add eggs, sugar, oil and pumpkin. Set it aside.

  4. In separate bowl, mix flour, cinnamon, baking soda, baking powder, cloves, ginger, nutmeg, and salt.

  5. Add into wet mixture, combine.

  6. Pour into baking pan.

  7. Bake for 30 minutes.

  8. Remove – let cool


Cream Cheese Frosting

  1. Cream butter and cream cheese

  2. Add sugar one cup at a time, scraping bowl down between each cup

  3. Add cream. Beat until combined, and frosting is fluffy


Assemble

  1. Spread cream cheese frosting evenly on cooled bars. Slice and serve.


Notes

  • This recipe uses our base Spiced Sweet Potato mix as we put in our Mushroom Stuffed Sweet Potato. One base for two desserts, savory and sweet!
