If you are a pumpkin spice lover, you will love this recipe - Pumpkin Caramel Chex! The great part is, if you are not a pumpkin spice individual, I bet you will still enjoy this recipe. The cereal is crunchy, coated in a soft but hard caramel. The cinnamon, nutmeg, cloves, and ginger add warm spice and cozy feelings of the holiday. It is addicting. My sister is not a pumpkin spice or caramel popcorn girl. She couldn’t stop eating these while we were putting together a puzzle. It is addicting! New holiday favorite.

  • Saucepan


Tips or Tricks

  • Use a medium to large saucepan to prevent overspill when adding baking soda. Volume will increase slightly when baking soda is added.

Servings

  • Serving Size: 1/2 cup

Ingredients

  • 2 cups salted or unsalted butter

  • 1 cup corn syrup

  • 1 cup brown sugar

  • ¼ cup pumpkin puree

  • 3 tablespoons vanilla

  • ¼ teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ¼ teaspoon ground cloves

  • ¼ teaspoon ground ginger

  • 1/8 teaspoon kosher salt

  • 1 teaspoon baking soda

  • 8 cups corn Chex

  • Kosher salt for garnish - optional


Directions


  1. In large bowl, add Chex. Set it aside.

  2. In saucepan, combine butter, syrup, sugar, puree, vanilla, cinnamon, nutmeg, cloves, ginger and salt. Stir continuously to prevent burning.

  3. Once thickens and reaches soft crack – 280° F. Remove from heat and add baking soda. Mix.

  4. Pour mixture over Chex, evenly coating.

  5. Pour onto parchment paper.

  6. Break into smaller pieces

  7. Let cool fully, serve


Notes

  • Store in an airtight container
