Christmas and Easter morning we have a family breakfast tradition. Egg and hashbrown casserole, Danishes, fresh fruit, bacon, and juice.


This year, I wanted to switch it up and created this Coconut Almond French Toast Bake recipe. Everyone loved it. It is safe to say, this will become a go to brunch recipe. It is sweet and moist with a burst of coconut and almond. Can’t wait for you to try it.

Tips or Tricks

  • Create a balanced meal by adding fresh berries, and hard-boiled eggs.

  • Spice it up with whipped cream, maple syrup, or caramel sauce.

Ingredients

  • 17.6-ounces brioche bread (1 loaf) – cut in 1” cubes

  • 13.5-ounces coconut milk

  • ½ cup heavy cream

  • 2 tablespoons granulated sugar

  • 1 teaspoon almond extract

  • ½ teaspoon kosher salt

  • 6 eggs

Toasted coconut

  • ¼ cup unsweetened coconut flakes

  • 1 tablespoon granulated sugar


Directions


  1. Preheat oven to 350°F.

  2. Line baking sheet with parchment paper – set aside.

  3. In a bowl combine unsweetened coconut flakes and sugar.

  4. Pour on a sheet pan, bake for 3 minutes at 350 degrees till slightly toasted.

  5. Pull out and set aside.

  6. In a bowl, combine coconut milk, heavy cream, granulated sugar, almond extract, kosher, and eggs.

  7. Add in cubed brioche bread. Combine well.

  8. Pour into a greased 13x9” pan. Bake for 30 minutes. Pull out, sprinkle toasted coconut and place back in the oven for another 30 minutes.


Notes

  • Can use sweetened coconut if you prefer, versus mixing unsweetened and sugar together.
