Only a few ingredients for this delicious, light and fluffy Avocado Lime Omelet

Omelets are a great source of protein and veggies in the morning. Sometimes omelets get a little “heavy” for me on hot summer days. When it is hot and humid (MN summers,) I go for cold or light but filling foods.
I first created this Avocado Lime Omelet recipe roughly 8 years ago. I needed to use left over avocados and limes, and I was craving a cooked breakfast. I didn't have AC in my house and so I didn't want any heavy. This Avocado Lime Omelet was perfect.
The omelet is light and airy, the citrus lime is bright and refreshing, and the avocado is rich and creamy. Top it off with cilantro for a fresh citrus hint and black pepper for a little zip. Delicious!
Easy, minimal ingredients and healthy - Avocado Lime Omelet

Equipment
Teflon pan
Tips or Tricks
I get the best results with omelets if I don’t rush it and keep the pan on low
Length of Time
Prep Time - 5 minutes
Cook time - 6 minutes

Serving Size: 1 omelet

Ingredients
2 tablespoons salted butter
2 eggs
½ avocado diced
½ lime juice
TT kosher salt
TT black pepper
Dash of lime zest
2 teaspoons cilantro chopped
Directions
Heat pan – low setting
Beat eggs separately. Set aside
Combine avocado, lime, salt, and pepper. Set aside
Melt butter in pan
Pour in beaten egg, do not stir
Once ¾ cooked through, add ½ avocado mix on half of the egg
Flip the other half of the egg over the avocado mix
Continue cooking on low heat for 1-2 minutes to warm avocados
Remove and place on plate.
Garnish with ½ the cilantro.
Repeat for second omelet
Notes
If you are not a fan of omelets, this can be made as scrambled eggs instead
