Butter Thyme Mashed Potatoes

Creamy buttery mashed potatoes with thyme and sage. You won't need the gravy.

Butter Thyme Mashed Potatoes is my way of eating mashed potatoes. I am not a big gravy person, unless it is white gravy for biscuits and gravy. This recipe is easy to make and full of flavor. The dried herbs add earthiness while the butter adds luxuriousness. These potatoes are decadent. Saves time in the kitchen too, don’t have to worry about making gravy.

Tips or Tricks
Fill a pot with water. As you are cutting your potatoes, place them in the pot of water right away to prevent browning. Once cutting is done, you can adjust your water level in the pot.

Ingredients
3 pounds russet potatoes – large dice
4 tablespoons salted butter
3 teaspoons dried thyme
3 teaspoons dried sage
4 tablespoons heavy cream
Kosher salt
Black pepper
Directions
Add potatoes to a pot, cover with water roughly 1” above potatoes. Add teaspoon kosher salt
Bring potatoes to boil, cook until tender
Drain potatoes, add back to pot with heat on low
Add butter, herbs, and cream
Mash potatoes with masher until preferred consistency
Add 1 teaspoon salt and pepper

Notes
Potatoes can be mashed with a mixer versus a masher. It always depends on my mood. If I am whipping it up quick for dinner, I choose masher. Saves time and dishes. If I am serving it to a guest, I use my mixer.
