Does anyone else out there love a good, warm, hearty breakfast? I go in stages. Sometimes I like a light nutritional breakfast. Other times, give me something warm, full of flavor and comforting. This Pumpernickel Chive and Egg Toast is a great combination of both. The cream cheese is savory, but the pumpernickel and eggs are simple. Both the egg and pumpernickel are nutritional and light too, all while being filling. Not sure what category to put this in. What I do know, it is yummy!!



Simple Breakfast - Cream Cheese & Chive, Egg and Pumpernickel Toast

Equipment

  • Toaster

  • Cooking spoon (spatula)

  • Pot


Tips or Tricks

  • I always find it easier to peel eggs while they are still warm.  Peeling “jammy” eggs, be gently, due to the egg white being slightly softer than if it was a hardboiled egg.

  • This recipe is also delicious onion bagels.

  • Prep Time - 5 minutes

  • Cook time - 7 minutes

Ingredients

  • 2 slices pumpernickel bread - toasted

  • 2 eggs (cooked to preference) we use both “jammy” and hard-boiled eggs

  • 2 tablespoon chive cream cheese

  • Dash kosher salt

  • Dash of cracked pepper

  • Chives – chopped - optional


Directions


  1. Spread cream cheese evenly over toasted pumpernickel bread

  2. If using “jammy” eggs – cut in half length wise. If using hard boiled eggs, slice in discs. Add eggs to cream cheese

  3. Season each slice of egg with salt and pepper

  4. Garnish with chives – optional

  5. Enjoy


Notes

  • “Jammy” eggs – bring water to boil. Add eggs (lowering slowly with spoon to prevent cracking.) Cook for 7 minutes. Remove and place in ice water to stop cooking. Peel.

  • Hard boiled eggs – add eggs to water. Bring it to boil. Cook for 9 minutes. Remove from heat. Run under cold water. Peel.
