Toasted wholesome pumpernickel bread, with savory cream cheese and chives, and a soft boiled egg with a jammy center. Rich, light, and filling breakfast that only takes minutes to make.

Does anyone else out there love a good, warm, hearty breakfast? I go in stages. Sometimes I like a light nutritional breakfast. Other times, give me something warm, full of flavor and comforting. This Pumpernickel Chive and Egg Toast is a great combination of both. The cream cheese is savory, but the pumpernickel and eggs are simple. Both the egg and pumpernickel are nutritional and light too, all while being filling. Not sure what category to put this in. What I do know, it is yummy!!

Tips or Tricks
I always find it easier to peel eggs while they are still warm. Peeling “jammy” eggs, be gently, due to the egg white being slightly softer than if it was a hardboiled egg.
This recipe is also delicious onion bagels.
