  • Prep Time - 5 minutes

  • Cook time - 12 minutes


Servings

Ingredients

  • ½ package puff pastry (thaw per directions on package

  • ¼ cup English cucumber small diced

  • ¼ cup broccoli top green section small diced

  • ½ cup extra sharp cheddar cheese shredded

  • 6 hardboiled eggs yolks

  • 2 tablespoons mayonnaise

  • 2 tablespoons miracle whip

  • 1 teaspoon mustard

  • Kosher Salt

  • Black Pepper


Directions


  1. Preheat oven to 400° F

  2. Spray muffin tin

  3. Place pastry square on top of muffin tin and push down (no worries if it is shorter than the tin, it will rise.)

  4. Repeat with remaining pastries

  5. Bake for 12 minutes, remove pastries from tin to cool

  6. While pastries are cooling, make the deviled egg filling combining egg yolk, mayonnaise, miracle whip, mustard, dash of salt, and dash of pepper.

  7. Using an end of a wooden spoon (or any item you may have on hand) to poke a hole in the middle of the pastries (1” wide)

  8. Fill each pastry with a spoonful of deviled egg filling, garnishing with cucumber, broccoli and cheese.


Notes

  • The egg whites are great for making an avocado egg salad (mix egg whites, avocado, lime juice, kosher salt and black pepper)
