Egg and Arugula Breakfast Sandwich

Simple, minimal ingredient breakfast sandwich. Cheddar cheese, egg, arugula, onion, and English Muffin. Wholesome, breakfast for crazy mornings.

Back in the day, putting arugula in or on any breakfast item, wasn’t a thought. Then, as I got older, I started working on getting more protein and veggies for my breakfast. It was important to create something that was easy to make. A recipe that I could make in advance and freeze and was readily available. This Egg and Arugula Breakfast Sandwich fit the bill! I love this sandwich.
The warm savory egg and cheese complements the fresh peppery arugula. It ends with delicious nuttiness of the wheat English muffins. Can’t wait for you to try this recipe!
Veggie and Egg Breakfast Sandwich - Egg and Arugula

Tips or Tricks
If freezing, allow sandwich to cool completely
Wrap in tinfoil, put in freezer bag, and freeze.

Ingredients
4 English muffins
2 tablespoon salted butter
4 eggs
½ cup shredded cheddar cheese
1 tablespoon purple onion diced
1 cup arugula
Dash kosher salt
Dash black pepper
Directions
Preheat oven to 350° F
Butter English muffins and place on a baking sheet and bake for 6 mins. Pull out, flip, and bake another 6 minutes. Set it aside.
While English muffins are baking, in a bowl, mix eggs, spinach, parmesan, sundried tomatoes, salt, and pepper.
Pour in a greased 6” x 6” casserole dish – baking dish
Bake for 10 minutes.
Slice into 4 pieces
Assemble sandwiches
Bottom English muffin
1 slice of egg
Add ¼ c arugula
Top English muffin
Serve or Freeze
Notes
To freeze for future breakfast, do not add the arugula.
Wrap the sandwich in tinfoil, place in a Ziplock freezer bag and place in freezer.
When ready to eat, remove from tinfoil, microwave 90 seconds, flipping halfway (time may vary in different microwaves.) Remove top, then add arugula.
I have frozen the sandwiches with the arugula, tastes delicious but you do not get the crunch and freshness from the arugula if it is frozen. Preference. 😊
