Scrambled eggs with sweet potatoes, earthy mushroom, and sweet onions. Satisfying breakfast with eggs.

Sometimes it is hard to find a hearty but healthy breakfast dish. No more. This Sweet Potato and Mushroom Egg Breakfast Hash is fantastic. It has vitamin rich ingredients, protein and a little sausage to enhance the flavor. When I have this in the morning, I am not hungry until past noon, which is rare. I am a person that likes to have breakfast, snack, second snack, lunch and so on 😉. The dish is rich and savory but doesn’t leave you feeling heavy. It fuels you for the day getting you off on the right foot
Egg and Sweet Potato Hash with Mushroom and Sausage for Breakfast

Saucepan or pot nonstick
Tips or Tricks
Cook the eggs on low heat, stirring occasionally to get larger scramble egg pieces
Length of Time
Prep Time - 10 minutes
Cook time - 30 - 40 minutes

Ingredients
8 eggs
1 tablespoon heavy cream (can use any milk)
2 tablespoons avocado oil (or extra virgin olive oil)
1 yellow onion diced
4 sweet potatoes peeled and diced
4 precooked sausage patties diced (I like Great Value Frozen Sausage Patties)
8 ounces mushrooms sliced
Black pepper
Kosher salt
Directions
Beat eggs and cream
Heat saucepan on medium heat
Add eggs, scramble, season with dash of salt and pepper, and remove from pan
Add oil
Add onions, cook until translucent seasoning with 1/8 teaspoon kosher salt and black pepper
Add sweet potatoes season with ½ teaspoon black pepper and 1 teaspoon kosher salt
Once the outside starts to soften, add sausage and mushrooms
Cook until sweet potatoes are heated through.
While the sweet potatoes are heating through, I flip occasionally allowing the sweet potatoes to caramelize on the bottom of the pan. Low to medium heat. Careful not to over mix, preventing the sweet potatoes from breaking down.
