Mediterranean Beef Roll-up

The Mediterranean Beef Roll Up is an exquisite blend of flavors. The beef is succulent and tender, complemented by tangy feta, tart sundried tomatoes, and salty capers, all balanced with the addition of chopped spinach. Furthermore, roasting it on a single sheet pan saves time and minimizes cleanup efforts.

This Mediterranean Beef Roll Up blew us away. Not only was it delicious, but it also looked and tasted gourmet. It only took a matter of minutes to make. This recipe will on repeat in our house. We paired the beef roll up with our Mediterranean Protein pasta bowl. Yum and yum. The Mediterranean beef was a wonderful combination of flavors. The beef is tender and juicy. Inside there is tangy feta, tart sundried tomatoes, and salty capers. Everything is balanced with the chopped spinach. Roast on one sheet pan, saving time and energy on clean up. This will most likely be our Valentine dinner this year.

Parchment paper
Tips or Tricks
Lay think steak flat on parchment paper, but don’t spread the width out. Keep it compressed with each other to provide a stronger steak that won’t fall apart when rolling.

Prep Time - 5 - 10 minutes
Cook time - 16 minutes

Serving Size: 1 beef roll up
Servings: 2
Ingredients
2 pieces of chuck steak thinly shaved
2 cups spinach chopped
2 teaspoons capers
4 teaspoons sundried tomato pesto
2 tablespoons feta
4 teaspoons olive oil
To taste kosher salt
To taste black pepper
Directions
Preheat oven to 350° F
Lay each steak thin flat on the parchment paper
Season with salt and pepper, evenly across one side (just a pinch, due to the feta, pesto and capers will have salt)
Spread 2 teaspoons sundried tomato pesto on each beef, evenly spread
Spread out 1 teaspoon of capers on each
Sprinkle 1 tablespoon of feta on each
Evenly spread spinach on each beef slice
Drizzle 1 teaspoon of olive oil over the layered ingredients
Roll the steak as tight as you can (but careful not to rip the beef)
Drizzle the top of each roll with 1 teaspoon of olive oil.
Season the top of the roll, with a pinch of salt and pepper
Place the roll, with the seem down on the pan
Roast for 16 minutes
Let rest a couple minutes, serve
Notes
If preparing for a dinner party, or celebration, this can be prepped the night before. Pull out roughly ½ hour to hour prior to bring to room temp prior to placing it in the oven.
