Egg cups with mild nutty ricotta, citrusy lemon and a little onion flavors.

If I don’t start the morning off with a good breakfast or satisfying breakfast, I struggle. My eating the rest of the day is in trouble😉!
This Ricotta and Lemon Green Onion Egg Cup sets me off right. I love the taste and it satisfies my tastebuds. Rich with protein from egg and ricotta, it curbs hunger cravings. It is a win win!!
Oh, and there are two versions of this recipe, using the same ingredients. Identical ingredients that will provide a second breakfast option, with no fuss. A different experience. (insert link.)

Lemon Ricotta Egg Cup and Green Onion

Equipment
Muffin Tin
Tips or Tricks
Use a toothpick to test egg doneness (poke the egg portion, no the ricotta portion.

Prep Time - 5 minutes
Cook time - 10 - 15 minutes

Serving Size: 1 egg cup

Ingredients
6 Eggs
6 tablespoons Ricotta
2 teaspoons Lemon Juice
2 teaspoons green onions or chives diced
Dash of kosher salt
Dash of black pepper
Directions
Preheat oven to 350° F
Spray muffin tin
Crack each egg into one muffin slot
Add 1 tablespoon of ricotta to each egg cup
Add lemon juice and green onions (or chives) to each egg cup
Dash of kosher salt and pepper to each cup.
Bake 11-14 minutes
