If you have been here a while, you know that chai tea is one of my favorites. So of course, this fall I had to make a Spiced Chai Muffin Recipe. I do have to say, it hits the chai tea spot. This muffin is easy to make and has all the delicious warm spices of fall and winter. My favorite way to have it is with a nice glass of cold milk or warm coffee.  It pairs beautifully with both.  Cozy up in the morning with a muffin, filled with cinnamon, nutmeg and cloves with a hot mug of your favorite coffee.

Equipment

  • Muffin tin

  • Muffin liners

  • Ice cream scoop - optional


Tips or Tricks

  • I like to use an ice cream scoop for filling the muffin tins. It allows for less spillage and evenly filled tins for uniform muffins and making time


Length of Time

  • Prep Time - 10 minutes

  • Cook time - 12-14 minutes


Servings

  • Serving Size: 1 muffin

  • Servings: 14


Ingredients

  • 1 ¾ cup all-purpose flour

  • ¾ teaspoon baking powder

  • ¾ teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup vegetable oil

  • ¼ cup + 1/3 cup granulated sugar

  • 1/3 cup brown sugar

  • 2 eggs

  • 1 teaspoon vanilla

  • ¾ cup water

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground nutmeg

  • 1 teaspoon ground cloves


Directions

  1. Preheat oven to 350° F

  2. Prepare a muffin tin with muffin liners

  3. In a bowl, combine the dry ingredients – flour, baking powder, baking soda, and salt.

  4. In a separate bowl, combine the wet ingredients including the sugar – oil, sugar, brown sugar, eggs, vanilla, water cinnamon, nutmeg and cloves

  5. Pour the dry ingredients into the wet ingredients while stirring

  6. Fill each muffin liner ¾ full

  7. Bake for 12 - 14 minutes


Notes

  • Store in an airtight container

  • My husband and I also love to freezer these and pull them out periodically for breakfast
