Simple Spinach, Sundried Tomato and Egg Breakfast Sandwich

Need and want a grab and go breakfast that is delicious, homemade, balanced, and easy? Me too!! I created this Spinach and Egg Breakfast Sandwich for that. You can eat it right away, or freeze it for a future meal, saving you time, money, and cravings.

I used to work in the cities with a 45–60-minute commute depending on traffic. I was not one to wake up early to give myself an hour of prep and 30 minutes for breakfast. Instead, I woke up, got dressed, grabbed something easy for breakfast, an egg, protein bar, or muffin.


All delicious breakfasts, but sometimes, I wanted something warm, filling, and homemade. That is when I would make a quick stop at Caribou or the gas station for a breakfast sandwich. Over time, cost added up along with calories. Not anymore! This sandwich is so satisfying, healthy and is a simple to follow recipe.


Morning Life Saver - Spinach, Sundried Tomato and Egg Breakfast Sandwich

Equipment

  • Casserole – baking dish

  • Baking sheet

  • Tinfoil – if freezing for breakfast freezer meal

  • Bowl


Tips or Tricks

  • If you would like more protein, double the eggs (will require to bake longer)


Length of Time

  • Prep Time - 5 minutes

  • Cook time - 20 minutes


Servings

  • Serving Size: 1 sandwich

  • Servings: 4


Ingredients

  • 4 English muffins

  • 2 tablespoon salted butter softened

  • 4 eggs

  • ½ cup spinach sliced

  • ¼ cup shredded parmesan

  • ¼ cup sliced sundried tomato

  • Dash of kosher salt

  • Dash of black pepper


Directions

  1. Preheat oven to 350° F

  2. Butter English muffins and place on a baking sheet and bake for 6 mins. Pull out, flip, and bake another 6 minutes. Set it aside.

  3. While English muffins are baking, in a bowl, mix eggs, spinach, parmesan, sundried tomatoes, salt, and pepper.

  4. Pour in a greased 6” x 6” casserole dish – baking dish

  5. Bake for 10 minutes.

  6. Slice into 4 pieces


Assemble sandwiches

  1. Bottom English muffin

  2. 1 slice of egg

  3. Top English muffin

  4. Serve


Notes

  • To freezer, wrap in tinfoil, place in a Ziplock freezer bag and place in freezer.

  • When ready to eat, remove from tinfoil, microwave 90 seconds, flipping halfway (time may vary in different microwaves.) Enjoy
