A lot of rice bowls have the ingredients layered on top. This Sundried Tomato Creamy Chicken, the rice is part of the dish. The goal was to create an indulgent lunch that was a one pot dish that would also work as a comfort dinner. Tangy sundried tomatoes, seasoned chicken, and sweet basil. I have found that old fashioned oats work better than quick oats, creating a better crunch.

Ingredients
1/3 cup honey
¼ cup melted salted butter
2 teaspoon vanilla
1/3 cup brown sugar
4 cup old fashioned oats
1 ½ cup whole raw almonds
½ teaspoon kosher salt
Directions
1. Preheat oven to 350°F
2. Line a sheet pan with parchment paper
3. In bowl, mix honey, melted butter, vanilla, and sugar.
4. Add oats, almond and salt.
5. Spread out evenly on sheet pan
6. Bake for 10 minutes. Pull out stir
7. Bake another 4 minutes
Notes
Granola bakes better in an evenly thin layer. I usually use a full sheet pan or two half sheet pans.
Store in mason jar, in a cool dry area up to three months
