Sweet potatoes are a great autumn and winter ingredient. Sweet Potato Stuffed Mushrooms will not disappoint your fall taste buds. The mushrooms are tender and juicy, filled with sweet potatoes and all the spices. There is a little sweetness from the cinnamon and sugar. Some earthiness from the mushrooms and nutmeg. Finished with a little peppery kick but lightness from the coriander. This dish uses our versatile Spiced Sweet Potato mash. You will shine at Thanksgiving with this dish.

Ingredients

  • 16 ounces mushrooms cleaned and destemmed

  • 2 tablespoons avocado oil or extra virgin olive oil

  • 1-pound sweet potatoes diced and boiled

  • 2 tablespoon salted butter

  • ½ teaspoon ground nutmeg plus a dash

  • ¼ teaspoon ground cinnamon

  • ¼ teaspoon ground coriander

  • 1 tablespoon brown sugar

  • ¼ teaspoon kosher salt plus a dash

  • ¼ teaspoon black pepper


Directions


  1. Preheat oven to 400° F

  2. Bring a pot of water, sweet potatoes and a teaspoon of kosher salt to boil. Cook until tender.

  3. While potatoes are cooking, prep mushrooms. Wipe clean with damp paper towel (do not rinse mushrooms.) Drizzle with oil and season with a dash of salt and nutmeg. Place it on a baking sheet on parchment paper or in a casserole dish. Bake for 10 minutes. Remove and let sit until potatoes are ready.

  4. Add cooked potatoes to mixer, add butter, nutmeg, cinnamon, coriander, brown sugar, salt and black pepper. Mix.

  5. Fill each mushroom with the sweet potato mixture.

  6. Bake for 10 another 10 minutes.

  7. Serve.
