Sometimes we forget that all the flavor doesn’t have to be at the beginning of a recipe, before you cook it. This Roasted Sweet Potatoes with Horseradish recipe is a great example. The potatoes are full of flavor on their own with a gentle sweetness. Add a little salt and pepper to elevate the natural flavors. Serve with horseradish. How simple is that? The heat, tang and bite of the horseradish compliments the sweet savory potato. Opposites attract right? This is also delicious with purple yams too! In all transparency, I created this recipe with the purple yams. I adjusted it for sweet potatoes to create a more affordable budget friendly recipe. Hope you love it as much as I do.
Affordable Recipe - Horseradish and Sweet Potato Fries

Sheet pan
Parchment paper
Tips or Tricks
Have space between the potatoes on the pan, this will allow them to roast and caramelize versus steam

Prep Time - 10 minutes
Cook time - 30 minutes

Ingredients
1 ½ pounds sweet potatoes peeled and cut lengthwise roughly ¼” thick
1 tablespoon olive oil or avocado oil
¾ teaspoon kosher salt
½ teaspoon black pepper
2 tablespoons horseradish
Directions
Preheat oven to 350° F
Place sweet potatoes on parchment paper on sheet pan.
Drizzle with oil, coating evenly
Season with salt and pepper evenly
Roast for 30 minutes
Garnish with horseradish - serve
Notes
Time will vary depending on the size of potatoes you cut and your oven. Cook to your preferred doneness. This recipe will be soft with caramelized ends.
