A warm soup during the busy holidays is comforting and delicious. This Tortellini Soup is easy to make and full of flavor. It has a wonderful aroma and taste of Italian herbs and spices. Bold tasty broth with cream for a little richness paired with hearty sausage. While eating this, you won’t even remember it is cold outside.

Ingredients

  • 1 tablespoon olive oil

  • 1 yellow onion diced

  • 1 large garlic clove minced

  • 1 pound ground sausage

  • 1 ½ teaspoons ground fennel

  • ½ teaspoon dried oregano

  • 1 teaspoon dried parsley

  • 1 ½ teaspoons dried basil

  • ½ teaspoon pepper flakes

  • 2/3 cup flour

  • 2 tablespoons unsalted butter

  • 32 ounces chicken stock – unsalted

  • ¼ cup + 2 tablespoons tomato paste

  • 4 cups water

  • 8 ounces 4 cheese tortellini

  • ½ cup heavy whipping cream

  • 1 juice of lemon

  • 4 cups kale chopped

  • 1 tablespoon fresh basil (for garnish - optional)

  • 1 tablespoon fresh parsley (for garnish - optional)

  • kosher salt

  • black pepper


Directions

  1. Heat a saucepan, add oil. Heat oil

  2. Add onion, dash of kosher salt and black pepper. Once translucent add garlic

  3. Once garlic is fragrant, add sausage. Add, fennel, dried oregano, parsley, basil, and pepper flakes

  4. Once sausage is browned, add butter and flour. Fully coat, cook 30 seconds to cook off flour taste

  5. Add chicken stock, tomato paste, water, ½ teaspoon kosher salt, and 1 teaspoon black pepper. Bring to boil

  6. Add tortellini. Turn heat to low, cover. Cook for 10 minutes.

  7. Add cream, lemon, and kale.

  8. Serve, garnish with fresh basil and parsley (optional)


Notes

  • We use Good and Gather 4 cheese tortellini - dried
