Stroganoff is a dish I had very few and in between, and when I had it, I would scarf it down. I hadn’t had it for over 10 plus years, until recently, something reminded me of it, and I was determined to create a recipe for it. This Turkey Stroganoff – One Pot Dish is delicious and simple. If you are looking for comfort food, this is a top ten option. It is creamy, tangy and delicious.

Servings

Ingredients

  • 1 pound ground turkey

  • 3 tablespoons avocado oil or extra virgin olive oil

  • 1 yellow onion diced

  • 1 teaspoon minced garlic

  • 8 ounces canned or fresh sliced mushrooms

  • 14.5 ounces chicken broth or stock (33 less sodium or no salt added)

  • 2 cups water

  • 4 cups egg noodles

  • 1 ½ cups sour cream

  • ½ cup heavy whipping cream

  • 1 teaspoon Worcestershire

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper


Directions

  1. Heat pot and olive oil

  2. Add onions, cook until translucent. Season with ¼ teaspoon kosher salt and black pepper.

  3. Add garlic – cook on low until fragrant.

  4. Add mushrooms and cook until softened.

  5. Add ground turkey seasoning with ¼ teaspoon kosher salt and 1/8 teaspoon black pepper. Brown turkey.

  6. Add chicken broth/stock and water. Bring it to boil.

  7. Add pasta, ½ teaspoon kosher salt and 1/8 teaspoon black pepper. Bring back to boil, then reduce on low, stirring occasionally.

  8. Once pasta is al dente, add sour cream, cream, and Worcestershire.

  9. Cook until liquid has reduced to your thickness preference. (Estimate 10 minutes.)


Notes

  • Peppers, peas, corn, etc can all be added to this dish to increase the veggie serving. Add additional veggies at the mushroom stage.
