It only took me 11 years to achieve, but it was worth the wait. My niece mentioned how much she loves stuffed peppers, and that got me thinking. Before I knew it, I was whipping up a dish with our fresh peppers that was simply divine. This year, I've been focusing on simpler recipes, and this Unstuffed Pepper Casserole is the perfect example. A delightful blend of tender sweet peppers, Mexican spices, and cheese. This recipe is quick and easy to make. Just chop, cook, mix, and bake, and you'll be ready to dig in.

  • When you're short on time or don't feel like making rice from scratch, packaged microwavable rice is a great alternative. It only takes 90 seconds and saves you from having to do extra dishes.

Ingredients

  • 2 tablespoons avocado oil

  • 1 yellow onion diced

  • 1-pound small, sweet peppers – seeded and sliced

  • 1 pound ground beef

  • 1 ¾ teaspoons dried oregano

  • 2 ½ teaspoons paprika

  • 3 ½ teaspoons cumin

  • 1 ¾ teaspoons garlic powder

  • 1/3 cup tablespoons tomato paste

  • 1 ½ cup water

  • 8 ounces cheddar cheese – shredded

  • 2 cups cooked rice


Directions


  1. Preheat oven to 350° F

  2. In a pot (or Dutch oven) heat pan, add avocado oil on medium heat

  3. Add onions, season with ¼ teaspoon kosher salt and ¼ teaspoon black pepper.

  4. Once onions are translucent, add ground beef seasoning with oregano, paprika, cumin, garlic powder, 1 teaspoon kosher salt and ½ teaspoon black pepper.

  5. Once beef is browned, add cooked rice, tomato paste, water and peppers. Mix.

  6. Mix in ½ of the amount of cheese.

  7. Pour into a baking dish (or keep in Dutch oven)

  8. Evenly spread the remaining cheese on top

  9. Bake for 45 minutes

  10. Serve


Notes

  • If you like a dish with more of a kick, swap out the cheddar cheese for pepper jack and 1 jalapeno diced
