Baked Salmon, Mushroom and Roasted Pepper

Less than 5 ingredients, baked salmon with mushroom and roasted peppers. Earthy mushrooms and sweet roasted peppers on buttery salmon.

Growing up I didn’t like salmon. It wasn’t until it was at my aunt’s place, and I had baked salmon, with garlic, butter and asparagus. After that, I was sold. I started making it at home, and this is the recipe I created, Baked Salmon, Mushroom and Roasted Pepper. The best part is that it uses ingredients I regularly have stocked in my pantry and the recipe is beyond simple. The salmon shines in this recipe. The salmon pairs well with the roasted sweet peppers and mushrooms. Don't forget the butter that adds richness to finish the dish off.
Roasted Peppers and Mushroom Baked Salmon

Equipment
Parchment paper or tinfoil
Baking dish or pan
Paper towel
Tips or Tricks
Pat dry salmon prior to baking/cooking. This will assist in cooking, creating flaky versus mushy pieces.

Ingredients
2 – 6-ounce salmon filets – skinless or skinned
1 – 8 ounces canned sliced mushrooms
1 - 10.2 ounce jarred roasted red peppers
1 tablespoon salted butter
¼ teaspoon kosher Salt
¼ teaspoon black Pepper
Directions
Preheat oven to 350° F
Line baking sheet with parchment paper.
Create a little bowl with the tinfoil, place it on the parchment paper.
Add salmon, half of the peppers, mushrooms, butter, salt and pepper to each tinfoil bowl
Bake for 20 minutes

Notes
My favorite roasted red peppers to use are from the dollar store. It has vinegar and garlic in it, adding flavor, enhancing the dish. Any roasted red pepper will work.
