Crunchy crispy bacon, fresh tomatoes and lettuce and a creamy mayo sauce on a bed of brown rice. Perfect lunch for work.

Classic summer meal, BLT. I love sitting on a café patio enjoying a fresh BLT sandwich with kettle chips. At home, it is delicious with fresh tomatoes from the garden.
This BLT recipe is a minimal effort dish. With a few ingredients this BLT bowl is light and filling for those hot sunny days.
A BLT isn’t a sandwich easily prepped ahead of time for work lunches, no worries though, this BLT Bowl has you covered. Now you can enjoy it anytime. I designed this recipe to encompass the elements of the classic BLT sandwich. It has one variation. Brown rice in place of toast. It is delicious served fresh and warm, or cold out of the fridge.

To enhance the bacon flavor, toss in the warm bacon with the warm rice versus placing it on top of the bowl. The rice will absorb some of the bacon flavor.

Notes
This recipe is great for meal prepping for lunch. I usually put it in a glass Pyrex container, all mixed, take it out at lunch and eat it as it! Or separate the items if you would like to heat the bacon and rice.
Combine the bacon with the rice when it is warm (even for meal prepping.) The rice will take on some of the bacon flavor, enhancing the dish.
