Honey Almond Granola
Delicious Honey Almond Granola recipe to make at home for breakfast, snacks or even desserts.

Classic summer meal, BLT. I love sitting on a café patio enjoying a fresh BLT sandwich with kettle chips. At home, it is delicious with fresh tomatoes from the garden.

This BLT recipe is a minimal effort dish. With a few ingredients this BLT bowl is light and filling for those hot sunny days.

A BLT isn’t a sandwich easily prepped ahead of time for work lunches, no worries though, this BLT Bowl has you covered. Now you can enjoy it anytime. I designed this recipe to encompass the elements of the classic BLT sandwich. It has one variation. Brown rice in place of toast. It is delicious served fresh and warm, or cold out of the fridge.

Homemade honey granola almond. Delicious and filling. Eat it by itself, add milk or yogurt.

Equipment

  • Mixing bowl

  • Pot


Tips or Tricks

  • To enhance the bacon flavor, toss in the warm bacon with the warm rice versus placing it on top of the bowl. The rice will absorb some of the bacon flavor.

  • Prep Time - 15 minutes

  • Cook time - 45 minutes


Servings

  • Serving Size: 1 bowl

  • Servings: 3


Ingredients

Rice

  • 1 cup brown rice

  • 2 cups water

  • ½ teaspoon kosher salt


Dressing - Sauce

  • ½ cup mayo

  • 1 ½ tablespoons olive oil

  • 1 ½ tablespoons lemon juice

  • Dash black pepper


Toppings

  • 1 cup cherry tomatoes sliced

  • 1 ½ cups Romaine lettuce, sliced

  • 1 package bacon - cooked


Directions


  1. Cook bacon

  2. Set aside

  3. While bacon is cooking make the dressing - sauce, in a bowl, mix mayo, olive oil, lemon juice and pepper.

  4. Set aside


Assemble

  1. 1 c. rice

  2. 4 slices of bacon

  3. 1/3 c. cherry tomatoes

  4. ½ c lettuce

  5. 1 T. dressing

  6. Serve


Notes

  • This recipe is great for meal prepping for lunch. I usually put it in a glass Pyrex container, all mixed, take it out at lunch and eat it as it! Or separate the items if you would like to heat the bacon and rice.

  • Combine the bacon with the rice when it is warm (even for meal prepping.) The rice will take on some of the bacon flavor, enhancing the dish.
