Citrusy Cilantro Lime Chicken in a Pita

Warm the pita in the microwave for a few seconds to become more pliable

Ingredients
Cilantro Lime Chicken
2 – large chicken breasts
2 tablespoons olive oil
2 limes zest and juice
2 garlic cloves – minced
1/3 cup cilantro chopped
¼ teaspoon red pepper flakes
¼ teaspoon coriander ground
¼ teaspoon kosher salt
¼ teaspoon black pepper
Cucumber Lime Drizzle
2/3 cup English cucumber
2/3 cup Greek plain yogurt
1 lime juice
½ teaspoon kosher salt
Directions
Cilantro Lime Chicken
Preheat oven to 350° F
In a baking dish, combine all ingredients except chicken
Add chicken, coat evenly
Bake 30 minutes (internal temp 165)
Rest 5 minutes
Serve
Cucumber Lime Drizzle
In blender or bullet mixer, add all ingredients. Mix until fully blended.
Serve
Assemble
In 1 pita, add ¾ c. lettuce
Add 1-2 pieces Cilantro Lime Chicken
Drizzle 1 T Cucumber Lime Drizzle
Add a couple spoonful of juice from Cilantro Lime Chicken
Repeat with 3 remaining pitas
Notes
Soft or hard shell will work in place of the pita
