Cilantro Lime Chicken Pita is bright, light, and garlicky with a little heat. It is an affordable, balanced meal for work lunch, Saturday lunch or dinner. It is a high protein and veggie dish and 3 recipes in one, that doesn't take long to whip up. Each recipe complements each other well and works well in other dishes. Great way to save time in the kitchen and feed your family.



Citrusy Cilantro Lime Chicken in a Pita

  • Baking dish

  • Bullet mixer, blender or food processor


Tips or Tricks

  • Warm the pita in the microwave for a few seconds to become more pliable

Ingredients


Cilantro Lime Chicken

  • 2 – large chicken breasts

  • 2 tablespoons olive oil

  • 2 limes zest and juice

  • 2 garlic cloves – minced

  • 1/3 cup cilantro chopped

  • ¼ teaspoon red pepper flakes

  • ¼ teaspoon coriander ground

  • ¼ teaspoon kosher salt

  • ¼ teaspoon black pepper

Cucumber Lime Drizzle

  • 2/3 cup English cucumber

  • 2/3 cup Greek plain yogurt

  • 1 lime juice

  • ½ teaspoon kosher salt


Directions


Cilantro Lime Chicken

  1. Preheat oven to 350° F

  2. In a baking dish, combine all ingredients except chicken

  3. Add chicken, coat evenly

  4. Bake 30 minutes (internal temp 165)

  5. Rest 5 minutes

  6. Serve


Cucumber Lime Drizzle

  1. In blender or bullet mixer, add all ingredients. Mix until fully blended.

  2. Serve


Assemble

  1. In 1 pita, add ¾ c. lettuce

  2. Add 1-2 pieces Cilantro Lime Chicken

  3. Drizzle 1 T Cucumber Lime Drizzle

  4. Add a couple spoonful of juice from Cilantro Lime Chicken

  5. Repeat with 3 remaining pitas


Notes

  • Soft or hard shell will work in place of the pita
