Sometimes in the evening, we are drained from the day, and we don’t want to cook. No worries. This recipe has you covered. One pot dish, with minimal effort, just stirring occasionally. Feta, Beef, and Corn Cellentani Pasta Bowl with Rosemary. The feta adds a delicious tang to the dish. The corn adds a little sweetness and crunch. The rosemary garnish adds a yummy herbal flavor. The beef and Cellentani pasta fills you up. Tasty has never been so easy.

Ingredients

  • 1 tablespoon avocado oil

  • 1 yellow onion diced

  • 1 teaspoon garlic minced

  • 1 pound ground beef

  • 2 tablespoons white cooking wine

  • 2 cups beef stock

  • 2 cups cellentani pasta

  • 2 – 15 ounce can whole kernel corn

  • 1 – 14.75 ounce can sweet corn cream style

  • 1 tablespoon fresh rosemary - garnish

  • ¼ cup feta – garnish

  • Kosher salt

  • Black pepper


Directions

  1. Heat saucepan, add oil.

  2. Add onions, season with a dash of salt and pepper. Cook until translucent.

  3. Add garlic, cook until fragrant.

  4. Add ground beef, season with ¾ teaspoon salt and black pepper. Brown

  5. Deglaze with white cooking wine. Add beef stock. Bring it to boil.

  6. Add pasta. Cook until al dente.

  7. Add corn, season with ½ teaspoon salt and pepper.

  8. Serve, garnish with feta and rosemary.


Notes

  • Garnishing with basil or thyme is delicious too.
