Arugula is not the salad greens I grew up with and wasn’t my go-to. Now, I pick it more often and love this Fresh and Roasted Arugula Salad with Lemon Dijon Dressing. Each ingredient in the salad pairs well with the peppery arugula. The Hot Honey Brussels Sprouts give the salad a little savory and sweet. The bacon gives a crunch to everything. The Lemon Dijon Dressing adds brightness. And the jalapeno and tomatoes add freshness. A little bit of everything in one salad.

If you are looking to save time and money in the kitchen, instead of making fresh hot honey brussels sprouts and bacon, use leftovers.
Make bacon for breakfast and the hot honey brussels sprouts with a side of protein for lunch.
For dinner, enjoy this fulfilling salad. The salad is extremely delicious with fresh hot out of the oven and off the stove bacon and brussels sprouts, but using leftovers is nummy too. You make the recipes once versus multiple times.

Ingredients
5 cups arugula
4 slices cooked bacon (to your preference – I do it crunchy)
½ jalapeno sliced and seeded (use less or more depending on your heat preference)
½ cup cherry tomatoes halved
TT (to taste) cracked black pepper
½ of our Hot Honey Brussels Sprouts (half is listed below)
½ pound brussels sprouts halved
½ tablespoon avocado oil
½ tablespoon honey
¼ heaping teaspoon cayenne pepper
1/8 teaspoon kosher salt
1/8 teaspoon black pepper
Lemon Dijon Dressing
3 tablespoons avocado oil
1 tablespoon lemon juice
1 teaspoon coarse Dijon mustard
¼ teaspoon kosher salt
¼ teaspoon black pepper
Directions
Hot Honey Brussels Sprouts
Preheat oven to 350° F
Line baking sheet with parchment paper
Toss all ingredients together for Hot Honey Brussels Sprouts
Toss on parchment paper
Roast for 20 minutes
Lemon Dijon Dressing
In mason jar, add all ingredients and shake until fully mixed.
Assemble Salad
2 ½ cups arugula
2 slices bacon
¼ jalapeno
¼ cup tomato
Crack fresh black pepper to taste
Drizzle Lemon Dijon dressing to taste
