Easy vegetable side dish for any dinner or lunch, Ginger Peas. Sweet peas, savory sauteed onions, and warm spicy kick from the ginger.

One of my favorite vegetables is peas. Especially frozen peas or fresh sugar snap peas. Suppose I should correct that, it is mostly likely the only type of peas I use and/or eat. The peas in this Ginger Peas recipe shine. This recipe is bursting with flavor, utilizing only a few ingredients. The dish is savory with sauteed onions little bite from the pureed ginger. A perfect side dish to any recipe.

Heat peas until they are just warm/hot. If continued to cook, they will start to shrivel, harden and turn brown.

Ingredients
2 – 7 ounces Nann Flat Bread (or any brand)
4 tablespoons salted butter softened
2 - 4 tablespoon cinnamon sugar
1-pound sweet potatoes diced and boiled
2 tablespoon salted butter
½ teaspoon ground nutmeg plus a dash
¼ teaspoon ground cinnamon
¼ teaspoon ground coriander
1 tablespoon brown sugar
¼ teaspoon kosher salt plus a dash
¼ teaspoon black pepper
Directions
Heat saucepan and oil
Add onions, cook until translucent or tender (to your preference)
Add frozen peas and ginger
Heat thru peas
Season with salt and pepper to taste
Serve
Notes
This side dish can become a main dish. Add ground beef, ground turkey, rotisserie chicken or sauteed chicken.
