Spice up your meals with this Gochugaru Sweet & Spicy Carrots recipe. It is a little sweet and a whole lot spicy. The carrots roast covered in a delicious glaze. The ginger paste gives a vibrant bite while the chili paste gives a depth of heat. The sweet roasted carrots and honey balance the heat of the chili and bite of the ginger. Wonderful thing about the dish, you can adjust the heat level to anyone eating it.

Ingredients

  • 2 cups carrots sliced

  • 1 tablespoon gochugaru paste

  • 1 ½ tablespoons ginger paste

  • 1 tablespoon olive oil

  • 1 tablespoon honey

  • ½ tablespoon rice vinegar

  • ¼ teaspoon kosher salt

  • ¼ teaspoon black pepper


Directions


  1. Preheat oven to 350° F

  2. In a mixing bowl combine gochugaru paste, ginger paste, olive oil, honey and rice vinegar. Toss carrots in, mix.

  3. Pour on to a baking sheet (optional to use parchment paper) bake for 30 minutes.

  4. Serve


Notes

  • These delectable carrots are perfect as a standalone dish or can be garnished with scallions and served over a bed of rice with your preferred meat.
