This Mediterranean Orzo Bowl is wonderful. It is full of protein, veggies and flavor. This bowl consists of Cumin Chicken, Orzo, Mediterranean Sauce, veggies and feta cheese.

The cumin chicken in the dish gives an earthy warm spice. The Mediterranean Sauce is fresh, light, with a bit of spice, warmth and sweetness. The feta adds tang. The fresh veggies; cucumbers, cherry tomatoes, spinach and onions add crunch and freshness. The olives add richness.

This dish has a little bit of everything! It is soo good!!

Tips or Tricks

  • Prepare bowls in advance for grab and go lunch

  • Cut off any white tendons on the chicken tenderloins prior to cooking.

Servings

Ingredients

Orzo

  • 1 cup orzo

  • 4 cups water

  • ½ tablespoon kosher salt


Garlic and Cumin Baked Chicken

  • 12 ounces chicken tenderloins

  • 2 tablespoons lemon juice

  • 3 tablespoons olive oil

  • 1 teaspoon ground cumin

  • 2 garlics minced

  • ¾ teaspoon. kosher salt

  • ¾ teaspoon black pepper


Mediterranean Dressing

  • 4 tablespoons lemon juice

  • 2 tablespoons olive oil

  • 3 tablespoons fresh mint chopped

  • 3 tablespoons fresh oregano chopped

  • 1 teaspoon kosher salt

  • 1 teaspoon black pepper


Bowl Toppers

  • 8 ounces orzo

  • 1 cup English cucumber diced/sliced

  • 1 cup cherry tomato halved

  • 18 kalamata olives

  • 1 cup spinach chiffonade (sliced thinly)

  • ¼ purple onion thinly sliced

  • 7 ½ tablespoon feta



Directions


Orzo

  1. Bring water and salt to boil.

  2. Add pasta

  3. Cook to al dente (slight bite to it) 7-10 minutes

  4. Drain excess water

  5. Set aside


Chicken:

  1. Mix all ingredients in a bowl. Add chicken, marinate for 10 minutes.

  2. Preheat oven to 350° F

  3. Place chicken and marinate in sprayed baking dish

  4. Bake 13-15 minutes or until internal temp reaches 160°F.

  5. Once done, pull out, set aside.


Dressing:

  1. Mix all ingredients, set aside.


Assemble Bowls:

  1. 1 c cooked orzo

  2. 1/3 c. cucumber

  3. 1/3 c. tomato

  4. 6 olives

  5. 1/3 c spinach

  6. 1 T onion

  7. 2 ½ T Feta

  8. 2 chicken tenderloins

  9. ½ T dressing (or more if you choose)

  10. Repeat

  11. Serve


Notes

  • Mediterranean dressing is great on a salad too
