I sometimes feel that shrimp is an overlooked protein, at least in my household where we have it about once a month. If you're looking for a reason to buy more shrimp, try out this Orange Shrimp and Sugar Snap Peas dish. With minimal ingredients, this recipe is quick to make. The vibrant orange flavor pairs well with the savory shrimp, while the sugar snap peas provide a touch of sweetness and a tender crunch. Tips or Tricks
· To ensure tender shrimp, I recommend flipping them only once. Add the shrimp and turn them over when you see orange color halfway up the shrimp. After flipping, cook until the grey part of the shrimp also turns orange. Then, remove from heat.

Ingredients
1 cup cooked white rice
½ teaspoon ground cardamon
½ teaspoon ground coriander
3 tablespoons butter – cold butter
22 medium shrimps
2 cups sugar snap peas diced diagonally
½ cup orange juice
1 tablespoon orange zest
2 tablespoons green onions diced
Kosher salt
Black pepper
Directions
Heat a saucepan, melt 2 tablespoon butter medium heat
Add shrimp, season with 1/8 teaspoon salt and pepper. Cook roughly 2-4 minutes – fully cooked - bright orange color. Pull out shrimp and set aside
Add peas to saucepan, season with ½ teaspoon salt and pepper.
Add orange juice, heat through until peas are al dente (Soft but a bite - if overcooked, peas will lose their beautiful bright green color).
Toss shrimp back in. Add orange zest.
Turn heat to low. Add last 1 tablespoon butter, once melted serve over bed of rice and garnish with green onions
Notes
For an extra layer of taste, try incorporating ginger, soy sauce, honey, and chili flakes to enhance the flavor of this dish.
