Gourmet sandwich at home, burst of flavors and textures.

Growing up, a sandwich in the summertime was a classic. Do you make sandwiches in the summer? If so, here is a sandwich to add to your menu. Pepperoni and Salmi sandwich with Oregano Vinegar Onions and Balsamic Glazed Tomatoes.
This sandwich is bursting with flavor. The Oregano Vinegar Onions are tangy, peppery and a little sweet. The Balsamic Glazed Tomatoes are sweet and tart. Combine these two with spicy pepperoni, savory salami, and buttery nutty provolone. Perfection!!
Pepperoni Salami Sandwich with Oregano Vinegar Onions and Balsamic Glazed Tomatoes

Bread knife
Tips or Tricks
Do not assemble sandwich until ready to eat.
If you need to assemble ahead of time, adjust the order the sandwich is assembled. Put the onions and tomatoes in between the meat and cheese to prevent the bread from getting soggy.

Ingredients
Sandwich Ingredients
6 Sub bread
1 Romain Lettuce
1 - pound Salami
1 - pound Pepperoni
1 - pound Provolone
1 batch of Balsamic Glazed Tomatoes
1 ½ batches Oregano Vinegar onions
Balsamic Glazed Tomatoes Ingredients
1 large tomato sliced
1/8 teaspoon kosher salt
1/8 teaspoon black pepper
¾ cup balsamic vinegar
3 tablespoons granulated sugar
1 teaspoon basil
Oregano Vinegar Onions Ingredients
1 onion sliced
2 tablespoons oregano (fresh or dried)
1/8 teaspoon kosher salt
1/8 teaspoon black pepper
2/3 cup olive oil
Directions
Balsamic Glazed Tomatoes Ingredients
Season tomatoes with salt and pepper, set aside.
In saucepan, combine balsamic, sugar and basil. Cook until thickened (ran a spatula down the middle, if it doesn’t come back together quickly, good to go.)
Pour sauce over tomatoes.
Oregano Vinegar Onions
Add all ingredients into a mason jar, shake
Remove lid, push onions down into liquid
Cover and chill for 24 hours
Assemble Sandwich
Bottom of bread, add 2 to 2 ½ slices of tomatoes
Add pepperoni
Add salami
Add provolone
Add lettuce
Add onions
Enjoy
Notes
Balsamic Tomatoes can be used instantly. They do develop and absorb more of the flavor if chilled 24 hours.
