Growing up in an Italian cold pasta salad was always one of my favorites. We even had it at my graduation party! There's something about the concept of a cold pasta salad that triggers a comforting memory. This Protein Pasta Salad with Spinach and Tomatoes has a completely different flavor profile, but it reminds me of my childhood favorite.
Not only is this dish delicious cold, but it's also tasty when served warm. With only a few ingredients, it's a simple and easy recipe to make. The chickpea pasta is tender, nutty, and sweet, coated in nutty avocado oil and spicy minced garlic. Toss the pasta with sweet juicy cherry tomatoes and spinach, and add the finishing touch with meaty, nutty, and creamy white beans.

Ingredients
4 ounces Rotini Chickpeas Pasta
1 can white northern beans rinsed and drained
4 cups spinach chiffonade
2 cups cherry tomatoes halved
1 tablespoon avocado oil
2 garlic cloves minced
½ teaspoon kosher salt
½ teaspoon black pepper
Directions
Cook pasta per box instructions
In a bowl, combine pasta, white beans, spinach, tomatoes, oil and garlic. Season with kosher salt and black pepper.
Serve either warm or cold.
Notes
This dish is very versatile and additional ingredients can be added. Feta, shredded cheese of choice, peppers, black olives, cucumbers, etc.
