Pumpkin Cheese Quesadilla

Quesadilla filled with cheese, pumpkin, cilantro and jalapenos. Cheesy, crispy quesadilla with lettuce, sourcream and salsa toppings.

I was working on emptying out the fridge, and as I do, creating recipes using the ingredients I have. Kill two birds with one stone. I had leftover pumpkin puree, tortillas and taco toppings. Insert Pumpkin Quesadilla. It blew my mind. Who would have ever thought you could make a quesadilla with pumpkin puree. The quesadilla had all the essence. Crunchy tortilla, cheesy, creamy inside and fresh toppings. The pumpkin made it feel cheesier and didn’t overpower anything. Instead, it enhanced the texture and flavors. The best part is, as one may think, it isn’t overpowering with pumpkin flavor. It is just enough to create a yummy quesadilla. This recipe is also a great way to use any leftover pumpkin puree!!
Delicious Lunch - Pumpkin Cheese Quesadilla

Equipment
Saucepan
Spatula
Tips or Tricks
Cut with either a chef’s knife or a pizza cutter
Cook slowly, to allow time for the ingredients inside to warm up, then turn the heat up towards the end to crisp the tortilla.

Cook time - 10 minutes

Ingredients
2 flour tortillas – regular size
¼ cup pumpkin puree
½ cup shredded sharp cheddar cheese
1 tablespoon cilantro
5 thinly sliced jalapenos – seeded
Dash kosher salt
Dash black pepper
1 tablespoon salted butter
½ cup romaine chopped - garnish
2 tablespoon salsas - garnish
1 tablespoon sour cream - garnish
Directions
On one side of tortilla, spread pumpkin puree evenly
Season with salt and pepper
Add cheddar cheese
Add cilantro
Add jalapenos
Cover with other tortilla
In heated saucepan, melt half the butter
Add tortilla, cook until golden brown. Flip and cook until golden brown
Place on plate and garnish with lettuce, salsa and sour cream
Serve immediately while still crisp
Notes
This Pumpkin Quesadilla can be garnished with any typical taco ingredient – black olives, peppers, onions, etc.
