Roasted Feta Tomato Chicken and Thyme

Sweet juicy roasted tomatoes, lemony earthy thyme, tangy feta cheese and seasoned chicken.

This year we planted, wait for it, 45 tomato plants PLUS. Yup, that is a lot. With the glorious bounty, I have been working on creating recipes using them. Fun and exciting. (Insert a little exhausting at times too if I am honest.) The goal is not to waste any or prevent minimal waste.
The first tomato dish created was this Roasted Feta Tomato Chicken and Thyme. It is a recipe fit for 2 people. Very simple dish, with minimal effort but bountiful in flavor. We used fresh Thyme straight out of the garden, which adds to the fun of creating these dishes. The dish is healthy, affordable and done in one dish. Easy clean up. The tomatoes are juicy and sweet. Thyme gives a subtle earthy essence. The feta gives everything a little richness and tang, complimenting the other flavors.
One Dish - Roasted Chicken, Feta, Thyme and Tomato

Equipment
8” x 8” baking dish (casserole dish)
Optional – parchment paper
Tips or Tricks
Line the casserole dish with parchment paper to save on clean up

Prep Time - 5 minutes
Cook time - 15 minutes

Ingredients
4 chicken tenderloins
2 ounces feta
1 cup cherry tomatoes
4 tablespoons fresh thyme
Drizzle extra virgin olive oil
¼ teaspoon kosher salt
¼ teaspoon black pepper
Directions
Preheat oven to 350° F
In a 8” x 8” baking dish, add chicken, drizzle, tomatoes and feta.
Drizzle with olive oil
Season with salt, pepper and thyme
Bake for 15 minutes
Notes
I roast it with a quarter block of feta cheese, but it will be just as delicious with crumble feta cheese.
