While I love slicing them up and adding a little salt and pepper, I also enjoy trying new recipes. That's why I highly recommend the Tahini Miso Salad – it's not only delicious, but it's also a breeze to prepare. You can either enjoy it as your main course, or as a side with some protein and carbs. The sauce is an irresistible blend of tangy, salty, savory and rich flavors that will leave your taste buds in awe. Simply toss the sauce with fresh veggies and rich beans, and voila – you have a winner!

Ingredients
½ tablespoon avocado oil
1 juice of a lemon
2 garlics minced
2 tablespoons miso paste
1 tablespoon tahini paste
¼ teaspoon black pepper
1 cup tomatoes diced
1 cup English cucumber diced (any cucumber will work)
1 cup sweet peppers or bell peppers diced
1 can white beans drained and rinsed
½ cup fresh parsley
Directions
In a bowl, make the sauce. Combine the avocado oil, lemon juice, garlic, miso, tahini and black pepper.
Toss in and mix the remaining ingredients. Serve or let chill for 2 hours then serve.
