Roasted sweet peppers with sweetened onions, savory mushrooms and turkey.

Turkey Mushroom and Onion Stuffed Peppers. Delicious. This dish uses our Turkey, Onion and Mushroom base recipe.
The roasted peppers are sweet with a little tang from the salt. The inside of the pepper is sweet with onions and earthy with mushrooms. The peppers are tender and juicy with a hint of salt.
A simple dish for everyone.
Mini peppers stuffed with Turkey Onion Mushroom

Ingredients
2-pounds mini multicolored peppers – stems cut off and seeded
½ tablespoon olive oil
½ teaspoon kosher salt
Turkey Mushroom and Onion Base Filling
3 ½ tablespoons olive oil
1 yellow onion diced
8-ounces canned mushrooms drained and sliced
4 garlic cloves minced
1-pound ground turkey
1 ½ teaspoons kosher salt
¾ teaspoon black pepper
Directions
Preheat oven to 350° F
In a bowl add peppers, ½ T olive oil, and ½ tsp kosher salt. Coat evenly, set aside.
In saucepan, heat oil
Add onions, season with salt and pepper to taste. Cook until translucent
Add garlic and mushrooms. Cook until heated through
Add ground turkey. Season with salt and pepper. Cook until fully browned.
Stuff peppers with turkey mixture. Use finger or end of wooden spoon to push mixture in.
Bake 15 minutes

Notes
Optional to make 1 lb. of stuffed peppers with half of the turkey base filling and use the other half for the following recipes. Twice Baked Gouda and Turkey Potatoes, or Turkey, Mushroom, Peas and Corn.
