Healthier Bang Bang Chicken Recipe for Lunch Prep

Some of my favorite combinations are sweet and spicy or sweet and salty. This un-breaded Bang Bang Chicken recipe falls into the sweet and spicy category. The honey adds a little sweetness while the ginger and chili add a little kick of spice. The chicken is tender and juicy seasoned with salt, pepper, and ginger. Toss the chicken in the creamy sauce and serve on rice, it is the perfect combination. Garnish with any fresh vegetables of preference, delicious balanced meal for lunch or dinner.

Equipment

  • 8 x 8” baking dish

  • Mixing bowl


Tips or Tricks

  • In a rush, or limited time, I will use a microwave pack of rice.


Length of Time

  • Prep Time - 5 minutes

  • Cook time - 14 minutes

  • Serving Size: 1/2 batch

Ingredients

  • Ingredients

  • 10 ounces chicken 1 – 2” cubed

  • 1 cup cooked rice (I use white, basmati or brown)

  • ¼ teaspoon ginger powder

  • ¼ teaspoon kosher salt

  • ¼ teaspoon black pepper

 

Sauce

  • ½ cup mayonnaise

  • 1 ½ teaspoons honey

  • 2 ¼ teaspoons ground fresh chili pastes (Sambal Oelek)

  • 1 teaspoon ginger paste

  • 1/8 teaspoon kosher salt

  • 1/8 teaspoon black pepper


Directions


  1. Preheat oven to 350° F

  2. Season chicken with ¼ teaspoon ginger powder, ¼ teaspoon kosher salt and black pepper. Place in an 8” x 8”. Bake for 14 minutes

  3. While chicken is baking, make sauce. Combine all ingredients, set aside.

  4. When chicken is done baking, toss into the sauce, mix.

  5. Serve over rice

  6. Enjoy


Notes

  • Tweak your sauce according to your preference! For a spicier kick, add extra chili paste. If you prefer a stronger taste, add more ginger. The possibilities are endless!
