Chili Butter on Grilled Corn on the Cob

It is Corn season in Minnesota! The best corn is from the stands at the end of a Farmer's driveway. Juicy, sweet and fresh. This Grilled Corn on the Cob with Chili Butter, does it justice.

My husband and I were talking the other day. We were discussing how great it would be if corn on the cob could be around year-round in Minnesota. We were enjoying our Chili Butter and Grilled Corn Cob recipe. We decided that corn on the cob is scrumptious, but being seasonal adds more novelty. No worries, each year we will look forward to having this recipe, and many other corn on the cob recipes. The chili butter adds a little kick and spice to the corn but doesn’t take away from the corn’s greatness.
Grilled Corn on the Cob with Chili Butter

Equipment
Grilling Tongs
Mixing bowl
Tips or Tricks
Before husking the corn, cut the bottom of the corn. The husks will slide right off.
Length of Time
Prep Time - 5 minutes
Cook time - 15-20 minutes

Serving Size: 2 corn cobs

Ingredients
6 corn cobs – shucked
1 tablespoon olive oil
¼ teaspoon kosher salt
¼ teaspoon black pepper
4 tablespoons salted butter – softened
½ teaspoon chipotle pepper
Directions
Turn on grill
In bowl, add softened butter and chipotle. Mix fully. Set it aside.
Coat corn with olive oil, kosher salt and pepper.
Place corn on grill, flip ¼ turn every 5 minutes. Medium heat. Total 20 minutes.
Pull off, serve with chili butter.
Notes
Grill with husk on – soak corn for 20 minutes. Carefully watch while grilling to ensure corn husks don’t start on fire.
