Sometimes, the best side is one vegetable prepared with a couple ingredients. Honey Sage Roasted Carrots is the perfect side dish. It is minimal effort to create with a few ingredients bursting with flavor. Delicious on its own, but harmonious with any dish you pair it with. The roasted carrots caramelize pulling out the carrot’s natural sweetness. The honey pairs with the caramelization enhancing the carrot. The sage adds a light citrus, sweet and earthiness, elevating the dish.

Equipment

  • Baking sheet

  • Parchment paper

  • Saucepan

  • Spatula

  • Peeler


Tips or Tricks

  • The recipe can be easily doubled or tripled. If increasing, make sure to allow space between carrots to roast evenly.

Ingredients

  • 1-pound whole carrots peeled

  • 2 teaspoons extra virgin olive oil

  • ¼ teaspoon kosher salt

  • 1/8 teaspoon black pepper

  • 2 tablespoons salted butter

  • 2 tablespoons honey

  • 8 whole sage leaves


Directions


  1. Preheat oven to 400° F

  2. Line baking sheet with parchment paper.

  3. Place carrots on parchment paper.

  4. Drizzle carrots with olive oil, salt and pepper.

  5. Roast for 25 minutes. While carrots are roasting, prepare honey sage butter.

  6. In saucepan melt butter. Add honey and sage. Once sage is fragrant, honey is warmed up, and butter is slightly darker in color, remove from heat.

  7. Coat carrots with honey sage butter and roast for another 5 minutes.

  8. Serve


Notes

  • If you prefer smaller sage pieces, for ease of eating, sage can either be chiffonade or chopped.
