Jalapeno Corn and Basil Salad

Corn salad, with corn, basil, cherry tomatoes and jalapeno. Jalapeno gives the salad a little heat. Sweet anise flavor provided by the basil. The cherry tomatoes add a little juice, sweetness and acidity.

Our garden is thriving this year (corn not quite ready yet.) We have an abundance of tomatoes, basil and jalapenos and this is the perfect opportunity to create some beautiful, delicious new recipes. My husband and I instantly fell in love with this Jalapeno Corn and Basil Salad. It was minimal effort, a great way to use our garden produce, and is colorful. Midway eating it, I popped out of my chair. Put the dish back on the stove, added a little cream and viola, a whole new recipe with one simple ingredient. Both scrumptious, all depending on what mood you are in. The awesome part....after we finished dinner, we brainstormed a few more recipes. I can’t wait to get started on them and share them with you. Hint – think Pasta and Soup.

I use unsalted canned vegetable. This allows for control on seasoning

Prep Time - 5 minutes
Cook time - 10 minutes

Serving Size: 1/4 batch

Ingredients
1 tablespoon avocado oil (or extra virgin olive oil)
1 yellow onion diced
1 jalapeno seeded and diced
15 ounces canned whole kernel corn – unsalted – drained
1 cup cherry tomatoes halved
2 tablespoons fresh basil chiffonade (thinly sliced)
Optional - 2 tablespoons heavy whipping cream
Kosher salt
Black pepper
Directions
In heated saucepan, add oil.
Add onions, cook until translucent seasoning with ¼ teaspoon salt and pepper
Add jalapeno, corn, and tomatoes seasoning with ¼ teaspoon salt and pepper.
Once tomatoes have been cooked down, add basil.
Cook on medium for a few minutes until basil is fragrant.
Optional – add heavy cream. Heat thru

Notes
Optional swap out the canned corn for roasted and grilled corn
Optional – roast jalapeno prior to adding to dish
