I find that the aromatic combination of basil, garlic, and sweet onions creates a delicious combination of flavors in this Onion Pesto Dip. Minimal Ingredient Dip - Onion Pesto Dip

Cook the onions over low to medium-low heat, allowing them to sweat and sweeten. Towards the end, increase the heat slightly to caramelize them a bit. This method will result in softened, sweet onions with an added depth of flavor from the caramelization..

Ingredients
1 tablespoon avocado oil
1 ¾ cups yellow onion diced
6.5 ounces pesto (Barilla Rustic Basil)
2 cups sour cream
Black pepper
Kosher salt
Directions
Heat saucepan, add avocado oil
Once oil is heated, add onions, season with ½ teaspoon salt and ¼ teaspoon black pepper. Once the onions are translucent, pour into a mixing bowl.
Add pesto, sour cream and ½ teaspoon salt. Mix. Serve immediately, or chill and serve.
Notes
Optional garnish with caramelized onions, extra pesto and fresh basil
Serve with potato chips, crostini or even fresh vegetables
Can make with fresh basil too
