Queso Velveeta Dip

The delightful Queso Velveeta dip contains sausage, spicy roasted green chilies, and the flavorful burst of ripe tomatoes.

During my childhood, our family had a tradition of spending New Year's Eve at our grandparents' cabin, filled with family, delicious food, and games. The highlight of the evening for me every year was enjoying the queso dip and playing the game “nuts.” Here's my simple and delightful twist on the traditional recipe. Whether I'm dipping chips in it while it's hot or enjoying it cold on its own, this dip always hits the spot!

Melt the cheese low and slow to prevent burning

Ingredients
2 tablespoons avocado oil
1 large yellow onion small diced
16 ounces ground sausage
1 ½ teaspoons garlic minced
10 ounce (1 can) diced tomato and green chilies (Rotel mild)
2 pounds Velveeta – original - cut into 1” cubes
4 ounces (1 can) fire roasted diced green chilies – mild
Kosher salt
Directions
Heat saucepan, add oil
Once oil hot, add onions, season with ½ teaspoon salt.
Once the onions are translucent add sausage and brown.
Add garlic, once fragrant, add the tomatoes and green chilies can and green chilies (include the juices in the cans) Heat through
Add Velveeta, melting on low
Once fully incorporated and heated through, serve.
Notes
My favorite chip with this did is Tostitos. I may be biased since this is the chip we used growing up. Doritos are always wonderful with it too.
