A few years ago, while working 50 plus hours a week with a 2-hour commute (hour each way,) I would come home exhausted. No food prepped and not much energy to make anything. One day, I whipped this recipe up Parmesan and Ritz Broccoli and fell in love with it. I needed something that I could quickly make, was nutritional and could be done in minutes. It was a dish I could indulge in (no matter time of day or how late it was.) The ritz crackers and parmesan added a wonderful richness to the broccoli.

Equipment

  • Pot

  • Strainer


Tips or Tricks

  • Broccoli should be tender to bite, but not soft and mush. A little “bite” to it. Al dente.


Length of Time

  • Prep Time - 5 minutes

  • Cook time - 10 minutes


Servings

  • Serving Size: 1/2 cup

  • Servings: 4


Ingredients

  • ·2 cups frozen broccoli

  • 12 ritz

  • 4 teaspoon grated parmesan

  • Dash kosher salt

  • Dash black pepper


Directions

  1. Bring a pot of water and teaspoon of salt (roughly 4 cups) to a boil

  2. Add broccoli. Cook until tender (should be bright green still)

  3. Drain

  4. Divide into 4 dishes

  5. On top of each serving, crush 3 ritz crackers, add a dash of salt and pepper, and 1 teaspoon parmesan


Notes

  • This is best served fresh of the stove. Garnish right before eating.

  • Rotisserie chicken would be a great addition for some protein
