Let me tell you about my love affair with peppered jelly, cream cheese, and crackers. It's a match made in snack heaven! But then, my mother-in-law showed up with a festive cranberry jalapeno dip that blew my taste buds away. So, I decided to create my own spinoff - introducing Peppered Pineapple Cream Cheese Dip! This dip is jam-packed with flavor - the sweet pineapple will transport you to a tropical paradise, while the peppers bring a zingy sweet flavor. And, let's not forget about the jalapeno that adds a fiery punch. The ultimate secret weapon? A sprinkle of kosher salt and a squeeze of lime juice that brings everything together in perfect harmony!

Tips or Tricks

  • To prevent excess juice from your finished dish, try using a slotted spoon when adding the peppered pineapple to the cream cheese.

Servings

  • Serving Size: 1/2 cup

Ingredients

  • 2 cups pineapple small diced

  • 1 cup sweet peppers small diced

  • 2 tablespoons jalapeno small diced and seeded

  • 1 teaspoon lime juice

  • 1 teaspoon lime zest

  • 16 ounces cream cheese softened

  • 1 teaspoon kosher salt

  • ¼ teaspoon black pepper


Directions


  1. In a bowl, combine pineapple, peppers, lime juice and zest, salt and pepper. Set aside

  2. On a serving dish, spread cream cheese evenly roughly ½” thick

  3. Using a slotted spoon, layer the peppered pineapple mixture on top of the cream cheese evenly (make sure to drain as much juice as possible to limit the cream cheese from getting watery.)


Notes

  • The lime juice enhances the flavor of the dish. Draining off the excess juice will not minimize the use of the lime juice.
