Here is a recipe, that all you need to add is oil, salt and pepper. Why? The ingredients do all the work for you. Roasted Butternut Squash Salad is full of veggies. Butternut squash, carrots, onions, broccoli and beets. Can’t forget the secret ingredient – apple. These ingredients complement each other. Pulling out flavors while bringing a depth of flavor to the dish. The apples and onions add a light sweetness. Rounding off the buttery nutty butternut squash and earthy beets. One bite fills your mouth with deliciousness.

  • Parchment Paper

  • Prep Time - 15 minutes

  • Cook time - 260 minutes


Servings

  • Serving Size: 1/2 cup

  • Servings: Roughly 7


Ingredients

  • 12 ounces frozen butternut squash

  • ¾ cup carrots – peeled and diced

  • 3 beets – peeled and diced

  • 2 cups frozen broccoli florets

  • 2 apples – peeled and diced (I like honey crisp apples in this)

  • 1 purple onion - diced

  • 2 tablespoons olive oil

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper


Directions


  1. Preheat oven to 350° F

  2. Add all ingredients to baking sheet lined with parchment. Toss ingredients together coating evenly with oil, salt and pepper. Evenly spread ingredients out on pan.

  3. Roast for 60 minutes.

  4. Enjoy


Notes

  • Herbs – thyme, rosemary or sage would be a lovely addition to this recipe.  Either ½ teaspoon dry each or 2 teaspoons fresh each.
